Ingredients

Scale
  • Pizza dough (homemade or store-bought)
  • 1/2 cup shredded cheese (divided)
  • 4 tablespoons ricotta cheese (divided)
  • 11/2 cups desired fillings (cooked)
  • Parchment paper
  • Olive oil for brushing
  • Salt for sprinkling
  • Marinara sauce for serving

Instructions

  • Prep ingredients: Make pizza dough and cook fillings. Cool for 30 minutes. Bring refrigerated dough to room temperature.
  • Prepare parchment: Cut parchment paper to fit your air fryer basket size.
  • Preheat air fryer: Heat on highest setting with basket inside for full 10 minutes.
  • Roll dough: On floured surface, roll into 8-9 inch circle, 1/8 to 1/4 inch thick.
  • Position dough: Place on parchment paper, ensuring it fits in air fryer basket.
  • Add base cheese: Place 1/4 cup shredded cheese 2 inches from closest edge. Add 2 tablespoons ricotta.
  • Layer fillings: Add remaining fillings totaling 1-1/2 cups on top of cheese base.
  • Top with cheese: Add remaining ricotta and sprinkle remaining shredded cheese over fillings.
  • Seal calzone: Fold dough over fillings, press edges to seal. Redistribute fillings and seal again.
  • Finish edges: Fold edges for thicker crust or trim excess. Make decorative cuts with spoon.
  • Final touches: Brush with olive oil, cut steam vents, sprinkle with salt.
  • Air fry: Cook at 400°F/200°C for 8-12 minutes, checking after 5-6 minutes.
  • Cool: Remove when golden brown, cool on rack for few minutes.
  • Serve: Cut and serve with marinara sauce for dipping.

Notes

  • Always preheat your air fryer completely to ensure immediate crisping and prevent soggy bottoms
  • Don’t overfill calzones as excess filling will leak out during cooking and create a mess
  • Brush olive oil evenly for consistent golden browning and enhanced flavor development
  • Create multiple small steam vents instead of one large cut to prevent filling from escaping
