  • Salt and pepper to taste
  • 3 cups vegetable broth
  • 2 cans (15 oz each) black beans, drained
  • 1 avocado, sliced for serving

Instructions

  1. Prepare vegetables: Peel and dice sweet potatoes into ½-inch cubes. Chop onion and bell pepper. Mince garlic cloves.
  2. Sauté aromatics: Heat oil in large pot over medium heat. Add onion and garlic, sauté for 2 minutes until fragrant.
  3. Add bell pepper: Stir in diced bell pepper and cook until softened, about 3-4 minutes.
  4. Season sweet potatoes: Add diced sweet potatoes with cumin, chili powder, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  5. Add liquids: Pour in vegetable broth and add drained black beans. Stir to combine all ingredients.
  6. Simmer: Bring to gentle boil, then reduce heat to low. Simmer uncovered for 25 minutes until sweet potatoes are tender.
  7. Serve: Ladle into bowls and top with fresh avocado slices and cilantro.
