- Salt and pepper to taste
- 3 cups vegetable broth
- 2 cans (15 oz each) black beans, drained
- 1 avocado, sliced for serving

Instructions
- Prepare vegetables: Peel and dice sweet potatoes into ½-inch cubes. Chop onion and bell pepper. Mince garlic cloves.
- Sauté aromatics: Heat oil in large pot over medium heat. Add onion and garlic, sauté for 2 minutes until fragrant.
- Add bell pepper: Stir in diced bell pepper and cook until softened, about 3-4 minutes.
- Season sweet potatoes: Add diced sweet potatoes with cumin, chili powder, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Add liquids: Pour in vegetable broth and add drained black beans. Stir to combine all ingredients.
- Simmer: Bring to gentle boil, then reduce heat to low. Simmer uncovered for 25 minutes until sweet potatoes are tender.
- Serve: Ladle into bowls and top with fresh avocado slices and cilantro.
