Description

Ingredients

  • 6 large flour tortillas
  • ½ cup brown sugar
  • 1½ teaspoons cinnamon
  • Oil for frying
  • 8 oz cream cheese
  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large apples, diced
  • ½ teaspoon cinnamon
  • ⅛ cup cornstarch
  • ⅓ cup brown sugar
  • 1 cup water
  • ⅛ teaspoon nutmeg
  • ½ teaspoon vanilla extract

Instructions

  1. Combine brown sugar and cinnamon in a bowl and set aside. Using 3.5-4 inch circle cutter, cut circles from tortillas.
  2. Heat 1 inch oil in a pan over medium heat. Put tortilla circles in oil and fry for 10-15 seconds, then flip, fold in half and fry until golden brown.
  3. Remove from oil, drain briefly, then immediately coat in cinnamon sugar mixture. Place on upside-down muffin tin to cool.
  4. In medium saucepan, combine water, cornstarch, brown sugar, cinnamon, and nutmeg. Cook 2-3 minutes over medium heat until thickened, stirring frequently.
  5. Add diced apples and vanilla extract. Cook 10 minutes until apples soften. Remove from heat and cool to room temperature.
  6. Beat cream cheese, heavy cream, powdered sugar, and vanilla extract for 2 minutes at medium speed until thickened.
  7. Transfer cheesecake mixture to piping bag. Fill shells with cream cheese filling and top with apple pie filling.

  • Keep oil temperature consistent at medium heat to prevent shells from burning while ensuring they cook through completely
