  • 1/2 cup yogurt or sour cream
  • 2 teaspoons vanilla extract
  • 1/4 cup milk
  • 1 and 1/2 cups peeled and chopped apples (about 2 medium apples)

Instructions

  1. Preheat oven to 425°F. Grease or line a muffin pan.
  2. Prepare crumb topping: mix sugars and cinnamon, stir in butter, then flour with a fork to form crumbles.
  3. Mix flour, baking soda, baking powder, and salt.
  4. In another bowl, beat butter and sugars until creamy. Add eggs, yogurt, vanilla, then mix.
  5. Gradually add dry mix and milk. Fold in chopped apples.
  6. Divide batter into muffin cups and top with crumb topping.
  7. Bake 5 minutes at 425°F, then reduce to 350°F and bake 15–18 more minutes.
  8. Cool 5 minutes in the pan, then transfer to a rack. Add glaze if desired.
