This moist apple fritter cinnamon bread combines chunks of tart apples with warm cinnamon sugar swirls and sweet vanilla glaze. Perfect for breakfast or dessert, it tastes like bakery-style fritters without the frying.

- ⅓ cup brown sugar
- 1 teaspoon ground cinnamon
- 2 Granny Smith apples (peeled and chopped)
- 2 tablespoons sugar
- 1 teaspoon ground cinnamon

- ½ cup butter (softened)
- 2 large eggs
- 1½ teaspoons vanilla extract
- 1½ cups all-purpose flour
- 1¾ teaspoons baking powder
- 1 teaspoon salt
- ½ cup milk
- 1 cup powdered sugar
- 1–3 tablespoons milk
Instructions
- Preheat your oven to 350°F. Line a 9×5 inch loaf pan with parchment paper and spray with nonstick cooking spray.
- Mix brown sugar and 1 teaspoon cinnamon in a small bowl. Set aside for layering.
- Toss chopped apples with 2 tablespoons sugar and 1 teaspoon cinnamon until well coated.
- Beat butter and ⅔ cup sugar until light and fluffy, about 3 minutes.
- Add eggs and vanilla extract, beating until smooth and combined.
- Whisk flour, baking powder, and salt in a separate bowl.
- Add flour mixture to butter mixture, then pour in milk. Mix until just combined.
- Pour half the batter into prepared pan. Top with half the apples and half the cinnamon-sugar mix.
- Add remaining batter, then top with remaining apples and cinnamon-sugar.
- Bake for 60 minutes or until a toothpick inserted in center comes out clean.
- Cool in pan for 15 minutes before removing to a wire rack.
- Mix powdered sugar with 1 tablespoon milk, adding more milk until glaze reaches desired consistency.
- Drizzle glaze over cooled bread and let set before slicing.
Notes
- Don’t overmix the batter – stir just until ingredients are combined for a tender crumb
- Cut apples into ½-inch chunks so they cook evenly and distribute well throughout the bread
- Room temperature ingredients mix better – take eggs and milk out 30 minutes before baking
- Test doneness with a toothpick in the center – a few moist crumbs are okay
- Wait until bread is completely cool before glazing to prevent the glaze from melting
