Description

This moist apple fritter cinnamon bread combines chunks of tart apples with warm cinnamon sugar swirls and sweet vanilla glaze. Perfect for breakfast or dessert, it tastes like bakery-style fritters without the frying.

  • 1 teaspoon ground cinnamon
  • 2 Granny Smith apples (peeled and chopped)
  • 2 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • ⅔ cup sugar
  • ½ cup butter (softened)
  • 2 large eggs
  • 1½ teaspoons vanilla extract
  • 1½ cups all-purpose flour
  • 1¾ teaspoons baking powder
  • 1 teaspoon salt
  • ½ cup milk
  • 1 cup powdered sugar
  • 13 tablespoons milk

Instructions

  1. Preheat your oven to 350°F. Line a 9×5 inch loaf pan with parchment paper and spray with nonstick cooking spray.
  2. Mix brown sugar and 1 teaspoon cinnamon in a small bowl. Set aside for layering.
  3. Toss chopped apples with 2 tablespoons sugar and 1 teaspoon cinnamon until well coated.
  4. Beat butter and ⅔ cup sugar until light and fluffy, about 3 minutes.
  5. Add eggs and vanilla extract, beating until smooth and combined.
  6. Whisk flour, baking powder, and salt in a separate bowl.
  7. Add flour mixture to butter mixture, then pour in milk. Mix until just combined.
  8. Pour half the batter into prepared pan. Top with half the apples and half the cinnamon-sugar mix.
  9. Add remaining batter, then top with remaining apples and cinnamon-sugar.
  10. Bake for 60 minutes or until a toothpick inserted in center comes out clean.
  11. Cool in pan for 15 minutes before removing to a wire rack.
  12. Mix powdered sugar with 1 tablespoon milk, adding more milk until glaze reaches desired consistency.
  13. Drizzle glaze over cooled bread and let set before slicing.

Notes

  • Don’t overmix the batter – stir just until ingredients are combined for a tender crumb
  • Cut apples into ½-inch chunks so they cook evenly and distribute well throughout the bread
  • Room temperature ingredients mix better – take eggs and milk out 30 minutes before baking
  • Test doneness with a toothpick in the center – a few moist crumbs are okay
  • Wait until bread is completely cool before glazing to prevent the glaze from melting
