- 3 tablespoons soy sauce
- 3 tablespoons brown sugar
- 1 pound boneless, skinless chicken breasts (cubed)
- 2 tablespoons sesame seeds
- ½ cup olive oil

- 1 tablespoon finely grated fresh ginger
- 7 ounces mixed salad greens
Instructions
- Fill a large pot with lightly salted water and bring to a rolling boil. Ease soba noodles into the water and return to a boil. Cook uncovered, stirring occasionally, until noodles are tender yet firm to the bite, 5 to 7 minutes. Drain and rinse under cold water.
- Heat soy sauce and brown sugar in a large skillet over medium heat. Add chicken cubes and cook, stirring frequently, until no longer pink in the center and juices run clear, 5 to 7 minutes. Transfer to a bowl, sprinkle with sesame seeds, and toss to coat evenly.
- Whisk olive oil, rice vinegar, and grated ginger together in a bowl until well combined. Divide salad greens among four plates. Top each with soba noodles and glazed chicken. Drizzle with ginger vinaigrette before serving.

- Don’t skip rinsing the soba noodles – cold water stops the cooking process and removes excess starch
