Ingredients

Scale
  • 1 medium head cabbage
  • 2 large carrots
  • 1 bell pepper
  • 1/4 cup fresh cilantro
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons lime juice
  • 1/4 cup chopped peanuts

Instructions

  1. Prepare vegetables: Wash and finely shred the cabbage, grate the carrots, and slice the bell pepper. Combine them in a large bowl.
  2. Add herbs: Chop the cilantro and sprinkle it over the veggies.
  3. Make dressing: In a separate bowl, whisk together peanut butter, soy sauce, sesame oil, and lime juice until smooth.
  4. Combine: Pour the dressing over the vegetable mix and toss well to coat.
  5. Final touch: Just before serving, sprinkle chopped peanuts on top for added texture.
  6. Serve: Enjoy chilled as a side dish or main course.

Notes

  • Shred cabbage as finely as possible for better dressing absorption and easier eating
  • Let the salad rest for 10 minutes before serving to allow flavors to meld together
  • Add peanuts just before serving to maintain their crunch and prevent sogginess
