  • 2 ripe avocados
  • 1/2 teaspoon salt
  • 2 tablespoons fresh lemon juice
  • 4 oz feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • Balsamic glaze (optional)

Instructions

  • Prepare bread: Preheat oven to 400°F (200°C). Slice baguette into half-inch thick pieces and arrange on a baking sheet. Brush lightly with olive oil.
  • Toast bread: Toast the baguette in the oven for 5-7 minutes until golden brown, monitoring closely to prevent burning.
  • Make avocado mixture: While bread is toasting, scoop avocados into a bowl. Add salt and lemon juice; mash until creamy but still chunky.
  • Add feta: Fold in crumbled feta cheese until well combined, maintaining some texture in the mixture.
  • Assemble bruschetta: Spread the avocado-feta mixture on each toasted slice. Top with halved cherry tomatoes and chopped basil.
