Instructions
- Preparation: Preheat oven to 400°F (200°C). Wash and dice potatoes into 1-inch cubes for even cooking.
- Seasoning: Toss diced potatoes with olive oil, minced garlic, salt, and pepper in large bowl until evenly coated.
- Assembly: Spread seasoned potatoes on baking sheet in single layer. Crumble feta cheese evenly over potatoes.
- Baking: Bake 30-35 minutes until potatoes are golden brown and crispy on edges, stirring once halfway through.
- Finishing: Remove from oven, garnish with fresh chopped herbs, and serve immediately while hot and crispy.

- Cut potatoes uniformly to ensure even cooking – aim for 1-inch cubes for best results
- Don’t overcrowd the baking sheet as this creates steam and prevents proper crisping
