Description

A delicious Mediterranean-inspired dish featuring crispy roasted Yukon Gold potatoes topped with tangy feta cheese and fresh herbs. Perfect as a side dish or light main course.

  • 2 lbs Yukon Gold Potatoes, diced
  • 8 oz Feta Cheese, crumbled
  • 3 tbsp Olive Oil
  • 3 cloves Garlic, minced
  • 2 tbsp Fresh Herbs, chopped
  • Salt & Pepper to taste

Instructions

  • Preparation: Preheat oven to 400°F (200°C). Wash and dice potatoes into 1-inch cubes for even cooking.
  • Seasoning: Toss diced potatoes with olive oil, minced garlic, salt, and pepper in large bowl until evenly coated.
  • Assembly: Spread seasoned potatoes on baking sheet in single layer. Crumble feta cheese evenly over potatoes.
  • Baking: Bake 30-35 minutes until potatoes are golden brown and crispy on edges, stirring once halfway through.
  • Finishing: Remove from oven, garnish with fresh chopped herbs, and serve immediately while hot and crispy.

Notes

  • Cut potatoes uniformly to ensure even cooking – aim for 1-inch cubes for best results
  • Don’t overcrowd the baking sheet as this creates steam and prevents proper crisping
  • Use room temperature feta cheese for better melting and distribution throughout the dish
  • Let potatoes rest 5 minutes after baking to allow feta to set slightly before serving
