Description

Ingredients

  • 4 ripe peaches, halved and pitted
  • 4 cups arugula or mixed greens
  • ½ cup crumbled goat cheese
  • ⅓ cup chopped pecans (toasted optional)
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Balsamic glaze for drizzling

Instructions

  1. Preheat grill to medium. Brush peaches with olive oil.
  2. Grill peaches cut side down 3–4 minutes until grill marks form.
  3. Slice grilled peaches.
  4. Toss greens with olive oil, salt, pepper.
  5. Plate greens, top with peaches, goat cheese, pecans.
  6. Drizzle with balsamic glaze. Serve.
