Description

  • 3 cups whole milk, cold
  • 2 medium ripe bananas
  • 4 tablespoons unsalted butter, melted
  • ½ teaspoon kosher salt

Instructions

  1. Spray 8-inch square pan with cooking spray. Line with perpendicular parchment sheets, leaving overhang on all sides.
  2. Process 41 vanilla wafers with ¼ teaspoon salt until fine crumbs form (25 seconds). Add melted butter, pulse until mixture clumps when squeezed.
  3. Transfer to prepared pan. Press into even layer using flat measuring cup bottom. Freeze while preparing next layer.
  4. Beat cream cheese, ¾ cup powdered sugar, 1½ teaspoons vanilla, and ¼ teaspoon salt until smooth (1 minute).
  5. Slowly pour in 1¼ cups cold heavy cream on medium-low speed. Increase to medium-high, beat until stiff peaks form.
  6. Slice 1 banana into ⅛-inch rounds. Arrange evenly over frozen crust.
  7. Spoon cream cheese mixture over bananas, spread evenly. Refrigerate while making pudding.
  8. Beat pudding mix with 3 cups cold milk on medium-low speed until thickened (1½ minutes).
  9. Arrange 25 vanilla wafers over cream cheese layer. Spoon pudding over cookies, spread evenly.
  10. Beat 1 cup heavy cream, 3 tablespoons powdered sugar, and ¾ teaspoon vanilla until stiff peaks form.
  11. Spread whipped cream over pudding layer. Cover with plastic wrap, refrigerate 5 hours to overnight.
  12. Top with crushed cookies and fresh banana slices before serving. Cut into 12-16 pieces.
