Description

  • 3 pieces (1 pound) boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 2 cups shredded cheese blend
  • 4 pieces large flour tortillas
  • 1 small red onion, sliced
  • ¼ cup chopped fresh cilantro
  • Additional BBQ sauce for drizzling

Instructions

  • Cook the Chicken: Heat skillet over medium heat. Season chicken breasts with salt and pepper. Cook 6-7 minutes per side until golden brown and internal temperature reaches 165°F.
  • Shred the Chicken: Remove chicken from heat and let cool for 5 minutes. Use two forks to shred into bite-sized pieces. Mix thoroughly with BBQ sauce until well-coated.
  • Prepare Tortillas: Lay tortillas flat on clean surface. Spread cheese evenly on one half of each tortilla. Top with BBQ chicken mixture and red onion slices. Fold tortilla over filling.
  • Crisp the Quesadillas: Heat same skillet over medium heat with light oil coating. Cook each quesadilla 3-4 minutes per side until golden brown and cheese is melted.
  • Slice and Serve: Transfer to cutting board and let rest 2 minutes. Cut into 4-6 wedges using sharp knife. Drizzle with additional BBQ sauce and serve immediately.

Notes

  • Let chicken rest before shredding to retain juices and prevent the meat from becoming dry or tough
