Description

A delicious and nutritious BBQ Chicken Sweet Potato recipe featuring tender roasted sweet potatoes topped with perfectly glazed BBQ chicken. This healthy comfort food combines lean protein with complex carbohydrates for a satisfying meal.

Ingredients

Scale
  • 4 pieces boneless, skinless chicken breasts
  • 4 pieces (800g) medium sweet potatoes
  • 3 tablespoons olive oil
  • 2 teaspoons fresh garlic, minced
  • 1 cup BBQ sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  • Prep and Preheat: Preheat your oven to 400°F (200°C). Prepare a baking dish with nonstick spray for easy cleanup.
  • Prepare Sweet Potatoes: Peel and cube sweet potatoes into bite-sized pieces. Toss with 2 tablespoons olive oil, salt, and pepper until evenly coated.
  • Roast Sweet Potatoes: Spread the sweet potatoes in the baking dish and roast for 25-30 minutes until tender and caramelized around the edges.
  • Season and Sear Chicken: Season chicken breasts with salt and pepper. Heat 1 tablespoon olive oil in a skillet over medium heat and cook chicken for 5 minutes per side until golden brown.
  • Add BBQ Glaze: Pour BBQ sauce over the chicken, coating it well. Cook for additional 3-4 minutes until heated through and sauce caramelizes.
  • Assemble and Serve: Layer roasted sweet potatoes in bowls, top with sliced BBQ chicken, and drizzle any remaining sauce on top.

Notes

  • Cut sweet potatoes uniformly to ensure even cooking and prevent some pieces from burning while others remain undercooked
  • Use a meat thermometer to ensure chicken reaches 165°F internal temperature for food safety
  • Let chicken rest for 5 minutes after cooking to retain juices when slicing
  • Reserve some BBQ sauce for serving to maintain moisture and enhance flavor presentation
