- 1 lb black cod fillets (also called sablefish)
- ¼ cup white miso paste
- 2 tbsp sake (or rice wine)
- 2 tbsp mirin
- 2 tbsp brown sugar or honey
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- Chopped green onions and sesame seeds for garnish (optional)
Instructions
- Prepare the Miso Marinade: In a small bowl, mix the miso paste, sake, mirin, brown sugar, soy sauce, and sesame oil until smooth.
- Marinate the Cod: Place the black cod fillets in a shallow dish and pour the marinade over them, coating the fish well. Cover and refrigerate for at least 1 hour, up to overnight for more intense flavor.
- Preheat the Traeger: Preheat the Traeger grill to 225°F.
- Smoke the Cod: Place the marinated black cod fillets directly on the grill grates. Smoke for 45-60 minutes, or until the internal temperature reaches 140°F and the fish flakes easily with a fork.
- Garnish and Serve: Remove the cod from the grill and garnish with chopped green onions and sesame seeds. Serve hot with steamed rice or grilled vegetables.
