Description

  • 1 cup salted butter (room temperature)
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 3/4 cup fresh blackberries
  • 1 tablespoon fresh lime juice
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • 1 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • Confectioner’s sugar for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch pan with parchment paper.
  2. Using a stand mixer, cream together butter, sugar, and flour until well combined. Press mixture firmly into prepared pan.
  3. Bake crust for 15-20 minutes until firm and golden. Remove from oven to prepare filling.
  4. Blend blackberries and lime juice in a blender until completely smooth.
  5. Strain blackberry mixture through fine mesh sieve into a bowl. Discard seeds.
  6. Whisk together sugar and flour in a medium bowl. Add eggs, lemon juice, 1/4 cup blackberry puree, and vanilla extract.
  7. Pour filling over baked crust. Bake 25-30 minutes until set and no longer jiggly.
  8. Cool completely at room temperature. Dust with confectioner’s sugar before cutting and serving.

Notes

  • Use room temperature eggs and butter for smoother mixing and better texture
  • Don’t overbake the filling – it should be just set in the center
  • Press the crust evenly using the bottom of a measuring cup
  • Strain the blackberry puree twice if needed to ensure no seeds remain
  • Wait until bars are completely cool before cutting for clean edges
