A protein-packed meal that transforms the classic BLT sandwich into a creamy chicken salad featuring bacon, lettuce, tomato, and tender chicken with a mayo-yogurt dressing. Perfect for meal prep, sandwiches, wraps, or as a standalone dish.

- 6 cups cooked chicken, chopped
- 12 slices bacon
- 1 large red onion, chopped
- 1 pint cherry tomatoes, halved
- 1 bunch scallions, chopped
- 1/2 cup light mayo
- 3/4 cup plain Greek yogurt
- 1 tbsp apple cider vinegar
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- (For poaching: 1 tsp salt, 1 tbsp peppercorns, 2 cloves garlic, 2 bay leaves)
Instructions
- Poach chicken with aromatics until 165°F; cool & chop.
- Roast bacon + onions at 425°F for 15 min until crispy/caramelized.
- Whisk mayo, yogurt, vinegar, spices into dressing.
- Fold chicken, tomatoes, scallions, onions into dressing.
- Add chopped bacon; chill 30 min.

- Add tomatoes just before serving if prepping ahead.
