- 2 packages (5.2 oz each) Boursin Cheese (Garlic and Herb)
- 2 pints cherry or grape tomatoes
- 3–4 tablespoons extra virgin olive oil
- 4 garlic cloves, minced
- Salt and black pepper to taste
- 1/2 teaspoon red pepper flakes
- 10–16 ounces pasta
- 1/4 cup fresh basil (6 leaves)
- 1 cup fresh baby spinach, chopped (optional)
- 1/2 cup Parmesan cheese, freshly grated
Instructions
- Preheat oven to 375°F. Place Boursin cheese rounds and cherry tomatoes in 9×13 baking dish.
- Drizzle olive oil over cheese and tomatoes. Add minced garlic, salt, pepper, and red pepper flakes.
- Roast in preheated oven for 30-35 minutes until tomatoes burst and cheese melts completely.
- Meanwhile, boil salted water in large pot. Cook pasta according to package directions until al dente.
- Before draining, reserve 1/2 cup pasta cooking water. Drain pasta thoroughly.
- Add drained pasta to baking dish with roasted mixture. Toss with reserved pasta water.
- Sprinkle fresh basil, spinach (if using), and grated Parmesan cheese. Serve immediately.
Notes
- Choose pasta shapes with ridges or curves like penne, rigatoni, or shells to hold the creamy sauce better
- Don’t skip the pasta water – its starch content helps bind the sauce and prevents it from separating
- Pierce larger tomatoes with a fork before baking to prevent them from bursting too violently in the oven
- Let the Boursin cheese come to room temperature before baking for more even melting and smoother sauce
- Add delicate herbs like basil only at the end to preserve their bright color and fresh flavor
