  • 2 packages (5.2 oz each) Boursin Cheese (Garlic and Herb)
  • 2 pints cherry or grape tomatoes
  • 34 tablespoons extra virgin olive oil
  • 4 garlic cloves, minced
  • Salt and black pepper to taste
  • 1/2 teaspoon red pepper flakes
  • 1016 ounces pasta
  • 1/4 cup fresh basil (6 leaves)
  • 1 cup fresh baby spinach, chopped (optional)
  • 1/2 cup Parmesan cheese, freshly grated

Instructions

  1. Preheat oven to 375°F. Place Boursin cheese rounds and cherry tomatoes in 9×13 baking dish.
  2. Drizzle olive oil over cheese and tomatoes. Add minced garlic, salt, pepper, and red pepper flakes.
  3. Roast in preheated oven for 30-35 minutes until tomatoes burst and cheese melts completely.
  4. Meanwhile, boil salted water in large pot. Cook pasta according to package directions until al dente.
  5. Before draining, reserve 1/2 cup pasta cooking water. Drain pasta thoroughly.
  6. Add drained pasta to baking dish with roasted mixture. Toss with reserved pasta water.
  7. Sprinkle fresh basil, spinach (if using), and grated Parmesan cheese. Serve immediately.

Notes

  • Choose pasta shapes with ridges or curves like penne, rigatoni, or shells to hold the creamy sauce better
  • Don’t skip the pasta water – its starch content helps bind the sauce and prevents it from separating
  • Pierce larger tomatoes with a fork before baking to prevent them from bursting too violently in the oven
  • Let the Boursin cheese come to room temperature before baking for more even melting and smoother sauce
