A delicious and easy recipe for breakfast pizza arugula that combines crispy pizza dough with eggs, cheese, and fresh peppery arugula for the perfect morning meal.

- 1 lb Pizza dough
- 2 tbsp Olive oil
- 1 ½ cups Shredded mozzarella cheese
- 4 Large eggs
- 2 cups Fresh arugula
- ¼ cup Grated Parmesan cheese
- ½ cup Cooked turkey bacon or chicken sausage
Instructions
- Preheat oven: Set oven to 475°F (245°C) and allow to fully preheat
- Prepare dough: Roll out pizza dough on floured surface to 12-inch diameter, transfer to baking sheet
- Add oil base: Drizzle olive oil over dough and spread evenly with brush or fingers
- Layer cheese and eggs: Sprinkle mozzarella cheese, crack eggs on top, add optional meats and Parmesan
- Bake pizza: Bake for 12-15 minutes until crust is golden and eggs are set
- Finish and serve: Remove from oven, top with fresh arugula, drizzle with olive oil, slice and serve
Notes
- Let pizza dough come to room temperature for easier rolling and better texture
- Create small wells in the cheese for eggs to prevent them from sliding off
- Pre-cook any raw meats before adding to ensure they’re fully cooked
- Use a pizza stone preheated in the oven for an extra crispy crust
