- 2 large flour tortillas
- 3 large eggs
- ½ cup shredded cheddar or Monterey Jack cheese
- 2 slices cooked bacon or 1 sausage link, crumbled (optional)
- ¼ cup diced bell peppers (optional)
- ¼ cup baby spinach (optional)
- 1 tablespoon butter or oil
- Salt and pepper, to taste
- Salsa, sour cream, or avocado for serving (optional)
Instructions
- Scramble the eggs: In a skillet, heat 1 tablespoon of butter or oil over medium heat. Crack the eggs into a bowl, whisk with a pinch of salt and pepper, and pour into the skillet. Cook, stirring gently, until the eggs are scrambled and set, about 3-4 minutes. Set aside.
- Assemble the quesadilla: Lay one tortilla flat and sprinkle half of the shredded cheese on one side. Add the scrambled eggs, crumbled bacon or sausage, bell peppers, and spinach if using. Sprinkle the remaining cheese on top, then place the second tortilla on top to form a quesadilla.
- Cook the quesadilla: Wipe the skillet clean, then place it back over medium heat. Add a little butter or oil, then place the quesadilla in the pan. Cook for 2-3 minutes on each side until the tortilla is golden brown and crispy, and the cheese is melted.
- Serve: Slice the quesadilla into wedges and serve with salsa, sour cream, or avocado on the side.
