Instructions
- Step 1: Prepare aromatics – Heat olive oil in large soup pot over medium heat. Add diced onion and minced garlic, sauté for 5 minutes until translucent and fragrant.
- Step 2: Add broccoli – Add fresh broccoli florets to pot and sauté for 5 minutes until bright green and slightly tender.
- Step 3: Add broth – Pour in vegetable broth, bring to gentle boil, then reduce heat and simmer for 10 minutes until broccoli is fork-tender.
- Step 4: Blend soup – Use immersion blender to blend soup until smooth, or leave slightly chunky if preferred.
- Step 5: Add dairy – Reduce heat to low, stir in heavy cream first, then gradually add shredded cheddar cheese until completely melted.
- Step 6: Final seasoning – Taste and adjust seasoning with salt and pepper. Serve immediately while hot.
Notes
- Grate cheese from a block rather than buying pre-shredded for smoother melting and better flavor
