Instructions

  1. In a large bowl, combine flour, baking powder, and salt. Mix well to ensure even distribution.
  2. In a separate bowl, whisk mashed banana, butter, egg, buttermilk, brown sugar, and vanilla until smooth.
  3. Add wet ingredients to dry ingredients. Stir with rubber spatula until just combined – lumps are okay!
  4. Heat griddle over medium-low heat and grease with butter. The temperature is crucial for even cooking.
  5. Drop batter in ⅓ cup portions, spreading gently to form even circles.
  6. Cook until bubbles form on surface (about 2-3 minutes). The thick batter makes bubbles harder to spot.
  7. Flip carefully and cook another 2 minutes until golden brown and cooked through.
  8. Serve immediately with your favorite toppings while still warm.
