- Brussels sprouts – halved
- Beef sirloin – cut into bite-sized pieces
- 2 tbsp olive oil
- Minced garlic
- Salt and pepper – to taste
- Soy sauce
- Thyme
Instructions
- Prep: Wash and halve Brussels sprouts, cut beef sirloin into bite-sized pieces
- Heat skillet: Heat large skillet over medium-high heat, add 2 tbsp olive oil until shimmering
- Sear beef: Cook beef in single layer for 3 minutes each side until golden brown, remove and set aside
- Cook garlic: Add remaining oil if needed, sauté minced garlic for 30 seconds
- Add Brussels sprouts: Add halved sprouts, season with salt and pepper, cook 5-7 minutes until golden
- Combine: Return beef to skillet, add soy sauce and thyme, stir well
- Finish: Simmer on low heat for 3 minutes, serve warm with remaining sauce
Notes
- Don’t overcrowd the pan when searing beef to ensure proper browning and flavor development
- Cut Brussels sprouts uniformly for even cooking and consistent texture throughout the dish
- Let the skillet get properly hot before adding oil to prevent sticking and ensure good searing
- Save the fond from cooking beef – those brown bits add incredible flavor to the vegetables
