- 4 cups fresh spinach (or frozen)
- 2 cups vegetable broth
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- Lemon wedges for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Sauté the garlic and red pepper flakes (if using) for 1-2 minutes until fragrant.
- Add the spaghetti, vegetable broth, and a pinch of salt. Bring to a boil and cook, stirring occasionally, for 8-10 minutes until the pasta is al dente.
- Stir in the spinach during the last 2 minutes of cooking until wilted (if using frozen spinach, thaw and drain before adding).
- Remove from heat, toss in the Parmesan cheese, and season with salt and pepper to taste.
- Garnish with lemon wedges for a fresh twist and serve warm.
