Description

Looking for tasty and budget-friendly meals? This One-Pot Pasta with Garlic and Spinach is a simple, affordable, and delicious recipe that’s perfect for quick dinners!

Ingredients

Scale
  • 8 oz spaghetti
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 4 cups fresh spinach (or frozen)
  • 2 cups vegetable broth
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Lemon wedges for garnish (optional)

Instructions

  • In a large pot, heat olive oil over medium heat. Sauté the garlic and red pepper flakes (if using) for 1-2 minutes until fragrant.
  • Add the spaghetti, vegetable broth, and a pinch of salt. Bring to a boil and cook, stirring occasionally, for 8-10 minutes until the pasta is al dente.
  • Stir in the spinach during the last 2 minutes of cooking until wilted (if using frozen spinach, thaw and drain before adding).
  • Remove from heat, toss in the Parmesan cheese, and season with salt and pepper to taste.
  • Garnish with lemon wedges for a fresh twist and serve warm.

Notes

  • Swap spinach for any leafy greens you have on hand, like kale or Swiss chard.
  • Add canned chickpeas or beans for extra protein.
  • For a vegan version, use nutritional yeast instead of Parmesan.
