- 1 cup Bulgur wheat
- 2 cups Water
- 1 whole, diced Medium cucumber
- 1 cup, halved Cherry tomatoes
- 3 tablespoons Fresh lemon juice
- 4 tablespoons Extra virgin olive oil
- 1/4 cup chopped Fresh parsley
- To taste Salt and pepper
Instructions
- Step 1: Prepare Bulgur – Rinse bulgur wheat under cold water. In a saucepan, bring 2 cups of water to a boil; add bulgur, reduce heat to low, cover, and simmer for 12-15 minutes until fluffy.
- Step 2: Prep Vegetables – While the bulgur cooks, chop the cucumber and halve the cherry tomatoes. Combine them in a mixing bowl with salt.
- Step 3: Make Dressing – In another bowl, whisk together lemon juice, olive oil, salt, pepper, and chopped herbs.
- Step 4: Combine Bulgur – Once bulgur is cooked and slightly cooled, fluff it with a fork and combine it with the chopped vegetables.
- Step 5: Dress and Toss – Pour the dressing over the mixture and gently toss until well combined.
- Step 6: Serve – Serve chilled or at room temperature; garnish with additional herbs if desired.
Notes
- Let bulgur cool completely before adding vegetables to prevent wilting
- Salt the vegetables separately first to draw out excess moisture
- Use the freshest lemon juice possible for the brightest flavor
- Taste and adjust seasoning after the salad has rested for 30 minutes
