Description

A fresh and nutritious bulgur lemon herb salad packed with Mediterranean flavors, featuring fluffy bulgur wheat, crisp vegetables, and a bright lemon herb dressing.


Ingredients

  • 1 cup Bulgur wheat
  • 2 cups Water
  • 1 whole, diced Medium cucumber
  • 1 cup, halved Cherry tomatoes
  • 3 tablespoons Fresh lemon juice
  • 4 tablespoons Extra virgin olive oil
  • 1/4 cup chopped Fresh parsley
  • To taste Salt and pepper

Instructions

  • Step 1: Prepare Bulgur – Rinse bulgur wheat under cold water. In a saucepan, bring 2 cups of water to a boil; add bulgur, reduce heat to low, cover, and simmer for 12-15 minutes until fluffy.
  • Step 2: Prep Vegetables – While the bulgur cooks, chop the cucumber and halve the cherry tomatoes. Combine them in a mixing bowl with salt.
  • Step 3: Make Dressing – In another bowl, whisk together lemon juice, olive oil, salt, pepper, and chopped herbs.
  • Step 4: Combine Bulgur – Once bulgur is cooked and slightly cooled, fluff it with a fork and combine it with the chopped vegetables.
  • Step 5: Dress and Toss – Pour the dressing over the mixture and gently toss until well combined.
  • Step 6: Serve – Serve chilled or at room temperature; garnish with additional herbs if desired.

Notes

  • Let bulgur cool completely before adding vegetables to prevent wilting
  • Salt the vegetables separately first to draw out excess moisture
  • Use the freshest lemon juice possible for the brightest flavor
