- 2 red snapper fillets (about 6 oz each)
- 1/2 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 1 cup stone-ground grits
- 4 cups water or chicken broth
- 1/2 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 2 tablespoons butter
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 teaspoon hot sauce (optional)
- Fresh parsley, chopped for garnish
Instructions
- In a large pot, bring water or chicken broth to a boil. Slowly whisk in grits and reduce heat to low.
- Simmer grits for 20-25 minutes, stirring occasionally, until thick and creamy.
- Stir in butter, heavy cream, cheddar cheese, salt, and pepper. Keep warm.
- Season red snapper fillets and shrimp with Cajun seasoning, salt, and pepper.
- Heat olive oil in large skillet over medium-high heat. Cook snapper 3-4 minutes per side until golden. Remove and set aside.
- In same skillet, cook shrimp 2-3 minutes per side until pink and opaque. Remove and set aside.
- Melt butter in same skillet over medium heat. Add onion and cook 3-4 minutes until softened.
- Add garlic and cook 1 minute. Stir in Cajun seasoning, heavy cream, and chicken broth. Simmer 5 minutes.
- Stir in Parmesan cheese and hot sauce. Season with salt and pepper to taste.
- Spoon grits onto plates, top with red snapper and shrimp. Drizzle with sauce and garnish with parsley.
Notes
- Use stone-ground grits for the best texture and flavor
- Don’t move the fish too early when cooking – let it develop a golden crust before flipping
- Save the fond from cooking seafood to build maximum flavor in your cream sauce
- Keep grits warm by covering with a lid and stirring occasionally
