  • 1 pint cherry tomatoes, halved

  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt
  • 1/4 tsp cayenne pepper
  • 1.5 cups white rice (uncooked)
  • 3 cups reduced sodium chicken broth
  • 1 lb raw shrimp, deveined
  • 3 scallions, chopped

Instructions

  1. Slice kielbasa into 1/4-inch rounds for even cooking
  2. Spray Dutch oven with olive oil, heat to medium-high
  3. Brown kielbasa slices for 10 minutes until edges caramelize
  4. Dice peppers and onion while sausage cooks
  5. Add vegetables to pot, cook 10 minutes until tender
  6. Scrape up browned bits with wooden spoon using vegetable moisture
  7. Stir in paprika, oregano, onion powder, cayenne, and salt
  8. Add halved cherry tomatoes, stir to combine
  9. Add dry rice and broth, stir thoroughly
  10. Bring to boil, then cover and reduce to simmer
  11. Cook 15-20 minutes until rice is tender
  12. Add shrimp, stir gently, cover again
  13. Cook 5 minutes until shrimp turn opaque
  14. Garnish with chopped scallions, adjust seasoning

Notes

  • Use medium or large shrimp for best texture – they won’t overcook as easily as smaller ones
  • Let rice rest 5 minutes after cooking before adding shrimp for fluffier grains
