- 2 tbsp extra virgin olive oil
- 3 medium yellow onions, sliced
- 6 oz soft goat cheese, crumbled
- 1 tbsp fresh thyme leaves
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat Oven: Set oven to 375°F (190°C) and allow to fully preheat
- Start Onions: Heat olive oil in large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until golden brown (10-15 minutes)
- Season and Finish: Season with salt and pepper, then add balsamic vinegar. Cook for additional 3 minutes
- Assemble Tart: Transfer caramelized onions to tart shell and evenly distribute crumbled goat cheese on top
- Bake: Bake for 25-30 minutes or until golden brown around edges
- Finish and Serve: Remove from oven, garnish with fresh thyme, and slice into wedges
Notes
- Slice onions uniformly for even cooking – aim for 1/4-inch thickness
- Don’t rush the caramelization process – medium heat prevents burning while developing flavor
- Let the tart cool for 5 minutes before slicing for cleaner cuts
