Ingredients
Scale
- 4 large eggs
- 2 medium Yukon Gold potatoes
- 1 large sweet onion
- 1/2 cup crumbled feta cheese
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prepare Oven: Preheat your oven to 375°F (190°C) to ensure even cooking
- Caramelize Onions: Heat olive oil in large skillet over medium heat. Add sliced onions and cook 10-15 minutes until golden brown
- Add Potatoes: Add thinly sliced potatoes to skillet with onions. Season with salt and pepper, cook 5-7 minutes until slightly softened
- Prepare Eggs: In separate bowl, whisk eggs with salt and pepper until frothy and well combined
- Combine and Top: Pour egg mixture over onion-potato blend in skillet. Sprinkle crumbled feta cheese evenly on top
- Bake to Perfection: Transfer skillet to preheated oven. Bake 25-30 minutes until puffed and lightly golden
Notes
- Slice potatoes uniformly thin for even cooking – about 1/8 inch thickness works perfectly
- Don’t rush the onion caramelization process; low and slow cooking develops the best flavor
- Let the frittata rest for 5 minutes after baking to make slicing easier and cleaner
- Use room temperature eggs for better incorporation and a fluffier final texture
