  • Author: Jennie Graham
  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Description

A delicious and hearty frittata featuring perfectly caramelized sweet onions, tender Yukon Gold potatoes, and creamy feta cheese. This easy one-skillet meal is perfect for breakfast, brunch, or dinner.

Ingredients

Scale
  • 4 large eggs
  • 2 medium Yukon Gold potatoes
  • 1 large sweet onion
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  • Prepare Oven: Preheat your oven to 375°F (190°C) to ensure even cooking
  • Caramelize Onions: Heat olive oil in large skillet over medium heat. Add sliced onions and cook 10-15 minutes until golden brown
  • Add Potatoes: Add thinly sliced potatoes to skillet with onions. Season with salt and pepper, cook 5-7 minutes until slightly softened
  • Prepare Eggs: In separate bowl, whisk eggs with salt and pepper until frothy and well combined
  • Combine and Top: Pour egg mixture over onion-potato blend in skillet. Sprinkle crumbled feta cheese evenly on top
  • Bake to Perfection: Transfer skillet to preheated oven. Bake 25-30 minutes until puffed and lightly golden

Notes

  • Slice potatoes uniformly thin for even cooking – about 1/8 inch thickness works perfectly
  • Don’t rush the onion caramelization process; low and slow cooking develops the best flavor
  • Let the frittata rest for 5 minutes after baking to make slicing easier and cleaner
  • Use room temperature eggs for better incorporation and a fluffier final texture
