Instructions
- Prep: Cool mashed potatoes, preheat oven to 375Β°F, prepare baking sheet with parchment paper
- Mix: Combine potatoes, cheeses, seasonings, and eggs in a large bowl; gradually add flour and mix until cohesive
- Shape: Form mixture into balls using a cookie scoop, roll in Panko breadcrumbs, and place on prepared baking sheet spacing evenly
- Bake: Bake for 20-25 minutes until golden brown and crispy, checking at 20 minutes
Notes
- Use day-old mashed potatoes for best texture – they hold shape better than fresh
- Don’t overmix after adding flour to prevent tough, dense puffs
- Start with slightly warm mashed potatoes for easier mixing; if mixture is sticky, add more flour gradually
