- 12 oz penne or rotini pasta
- 1 lb halal ground beef
- 1 packet taco seasoning (halal-certified)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup beef broth (halal)
- 8 oz cream cheese, softened
- 2 cups shredded Mexican cheese blend
- 1 cup sour cream
- 1 can black beans, drained
- 1 cup frozen corn
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F. Cook pasta according to package directions until al dente. Drain and set aside.
- Brown ground beef in large skillet over medium heat. Add onion and garlic, cooking until softened.
- Stir in taco seasoning, diced tomatoes, and beef broth. Simmer for 5 minutes.
- Add cream cheese and stir until melted. Mix in sour cream, beans, and corn.
- Combine cooked pasta with beef mixture. Transfer to greased baking dish.
- Top with shredded cheese. Bake for 25-30 minutes until bubbly and golden.
