  • Yield: 6 1x

Description

A hearty and creamy chicken corn chowder featuring tender chicken, sweet corn, and potatoes in a rich, flavorful broth. This comforting soup is perfect for any season and makes a satisfying meal.

Ingredients

Scale
  • 34 pieces (1 lb) boneless chicken breasts
  • 2 cups sweet corn
  • 1 medium yellow onion
  • 2 pieces garlic cloves
  • 2 medium russet potatoes
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. Step 1: Sauté Base – Melt butter in large pot over medium heat until bubbly. Add diced onions and minced garlic, cooking until fragrant and translucent (about 3-4 minutes)
  2. Step 2: Cook Chicken – Add diced chicken breasts to pot and cook for 5-7 minutes, stirring occasionally until no longer pink on outside
  3. Step 3: Add Vegetables – Stir in cubed potatoes and corn kernels, mixing well to combine with chicken and aromatics
  4. Step 4: Add Liquids – Pour in chicken broth and heavy cream, then add dried thyme. Stir everything together thoroughly
  5. Step 5: Simmer – Bring mixture to gentle simmer, then reduce heat and cook 15-20 minutes until potatoes are fork-tender and chicken is fully cooked
  6. Step 6: Season and Serve – Taste and adjust seasoning with salt and pepper. Ladle into bowls and serve immediately while hot

Notes

  • Cut chicken into uniform 1-inch pieces for even cooking and perfect bite-sized portions
  • Use frozen corn if fresh isn’t available – add it directly without thawing for best texture
  • Dice potatoes into ½-inch cubes so they cook through without becoming mushy
  • Keep heat at medium-low during simmering to prevent cream from curdling or separating
