  • 1 pound frozen boneless, skinless chicken tenders
  • 3 celery ribs, roughly chopped
  • 1 medium yellow onion, chopped (about 1 cup)
  • 1½ cups long-grain white rice
  • 1 (10.5-ounce) can condensed cream of chicken soup
  • Freshly ground black pepper (optional)

Instructions

  1. Set your oven to 350°F while you prepare the stovetop components.
  2. Bring water to a boil in your Dutch oven over high heat. Add salt and frozen chicken tenders. Boil uncovered for 10 minutes until mostly cooked through.
  3. Add chopped celery and onion to the pot. Reduce heat to medium-low, cover, and simmer for 10 minutes until vegetables soften.
  4. Remove chicken with tongs and set aside. Add rice to the vegetable broth, cover, and simmer for 20 minutes. Meanwhile, shred the chicken into bite-sized pieces.
  5. Remove from heat and stir rice gently. If excess liquid remains, drain it. Mix in shredded chicken and cream of chicken soup until well combined.
  6. Smooth mixture into an even layer. Bake uncovered for 30 minutes until top is golden. For extra crispiness, broil 2-4 minutes.
