Instructions

  2. Optional Sauté: Heat a skillet over medium heat and sauté onion and garlic for 3-4 minutes until fragrant. This step enhances flavor but can be skipped for convenience.
  3. Combine Ingredients: Add chickpeas, prepared vegetables, cumin, cayenne, vegetable broth, and coconut milk to your crockpot. Stir well to distribute spices evenly.
  4. Slow Cook: Cover and cook on low for 6 hours or high for 4 hours. The chili is ready when flavors have melded and vegetables are tender.
  5. Final Seasoning: Taste and adjust seasoning with additional cumin, cayenne, or salt as needed. Let rest 5 minutes before serving for best consistency.
