Ingredients

  • 2 tbsp Chinese sesame paste (tahini works as substitute)
  • 2 tbsp light soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp white sugar
  • 2 tsp toasted sesame oil
  • 1/8 tsp cooking salt
  • 2 heaped tbsp chili crisp (with oil and bits)
  • 1 tbsp fresh ginger, minced
  • 1 tbsp garlic, minced
  • 1 green onion, sliced
  • 1/3 cup cilantro, chopped
  • 140g instant ramen noodles OR 250g fresh noodles (hokkien, lo mein)

Instructions

  1. Test your chili crisp’s heat level by tasting it. Laoganma and similar brands are moderately spicy. Adjust quantity based on your preference.
  2. Mix sesame paste, soy sauce, vinegar, sugar, salt, and sesame oil in a large bowl. Place sliced green onions on top without mixing.
  3. Heat chili crisp with its oil in a small pan over medium heat. Add minced ginger and garlic, stirring for 30 seconds until golden and fragrant.
  4. Pour the sizzling chili mixture over the green onions. Listen for that satisfying sizzle, then mix everything together.
  5. Cook noodles according to package directions. Transfer them directly from pot to sauce bowl using tongs, bringing some pasta water along.
  6. Toss noodles thoroughly with sauce. Add pasta water if needed to achieve silky consistency. Mix in fresh cilantro.
  7. Taste and adjust seasoning. Add more salt or chili crisp as desired. Serve immediately while hot.

  • Use pasta water liberally – the starch helps create a silky sauce that coats noodles perfectly
  • Don’t skip the sizzling step – pouring hot oil over aromatics releases maximum flavor instantly
  • Fresh noodles absorb sauce better than dried, but both work wonderfully in this recipe
