- 2 tbsp Chinese sesame paste (tahini works as substitute)
- 2 tbsp light soy sauce
- 1 tbsp rice vinegar
- 1 tsp white sugar
- 2 tsp toasted sesame oil
- 1/8 tsp cooking salt
- 2 heaped tbsp chili crisp (with oil and bits)
- 1 tbsp fresh ginger, minced
- 1 tbsp garlic, minced
- 1 green onion, sliced
- 1/3 cup cilantro, chopped
- 140g instant ramen noodles OR 250g fresh noodles (hokkien, lo mein)
Instructions
- Test your chili crisp’s heat level by tasting it. Laoganma and similar brands are moderately spicy. Adjust quantity based on your preference.
- Mix sesame paste, soy sauce, vinegar, sugar, salt, and sesame oil in a large bowl. Place sliced green onions on top without mixing.
- Heat chili crisp with its oil in a small pan over medium heat. Add minced ginger and garlic, stirring for 30 seconds until golden and fragrant.
- Pour the sizzling chili mixture over the green onions. Listen for that satisfying sizzle, then mix everything together.
- Cook noodles according to package directions. Transfer them directly from pot to sauce bowl using tongs, bringing some pasta water along.
- Toss noodles thoroughly with sauce. Add pasta water if needed to achieve silky consistency. Mix in fresh cilantro.
- Taste and adjust seasoning. Add more salt or chili crisp as desired. Serve immediately while hot.
