Instructions
- Boil the eggs: Place eggs in a large pot and cover with cold water by 1 inch. Bring to a rolling boil over high heat.
- Cook perfectly: Once boiling, remove from heat, cover, and let stand for 12 minutes exactly.
- Ice bath: Transfer eggs immediately to ice water. Let cool for 5 minutes to stop cooking.
- Peel carefully: Gently crack shells all over and peel under cool running water for easier removal.
- Halve eggs: Cut each egg lengthwise with a sharp knife, wiping blade between cuts for clean edges.
- Remove yolks: Carefully pop out yolks into a mixing bowl, keeping whites intact.
- Make filling: Mash yolks with fork until smooth. Add mayonnaise and chili garlic sauce, mixing until creamy.
- Season: Add salt and pepper to taste, adjusting chili garlic sauce for desired heat level.
- Fill eggs: Transfer mixture to piping bag and pipe into egg white halves in decorative swirls.
- Garnish: Sprinkle with smoked paprika and top with crispy fried onions just before serving.
Notes
- Use eggs that are at least a week old for easier peeling
- Add a teaspoon of vinegar to boiling water if eggs crack
