Instructions

  1. Boil the eggs: Place eggs in a large pot and cover with cold water by 1 inch. Bring to a rolling boil over high heat.
  2. Cook perfectly: Once boiling, remove from heat, cover, and let stand for 12 minutes exactly.
  3. Ice bath: Transfer eggs immediately to ice water. Let cool for 5 minutes to stop cooking.
  4. Peel carefully: Gently crack shells all over and peel under cool running water for easier removal.
  5. Halve eggs: Cut each egg lengthwise with a sharp knife, wiping blade between cuts for clean edges.
  6. Remove yolks: Carefully pop out yolks into a mixing bowl, keeping whites intact.
  7. Make filling: Mash yolks with fork until smooth. Add mayonnaise and chili garlic sauce, mixing until creamy.
  8. Season: Add salt and pepper to taste, adjusting chili garlic sauce for desired heat level.
  9. Fill eggs: Transfer mixture to piping bag and pipe into egg white halves in decorative swirls.
  10. Garnish: Sprinkle with smoked paprika and top with crispy fried onions just before serving.
