Instructions

  • Prep Work: Gather all ingredients to ensure smooth cooking process. Beat eggs in small bowl.
  • Cook Eggs: Heat oil in large skillet over medium-high heat. Scramble eggs for 1 minute until just set. Remove and set aside.
  • Cook Vegetables: In same pan, sauté frozen peas, carrots, and chopped green onions for 2 minutes until warmed through.
  • Add Rice: Add cooked rice to pan and stir constantly for 2 minutes until heated and separated.
  • Season: Drizzle soy sauce and sesame oil over rice, mixing well for 1 minute until evenly coated.
  • Finish: Return scrambled eggs to pan, gently fold in, and serve hot with additional green onions.

Notes

  • Use day-old refrigerated rice for the best texture – fresh rice becomes too sticky when fried
