Description
A delicious and easy recipe for Chinese egg fried rice that you’ll love making at home. This authentic-style fried rice uses day-old rice and simple ingredients to create a flavorful, satisfying meal in just 10 minutes.
Ingredients
Scale
- 2 cups cooked rice
- 2 large eggs
- 2 stalks green onions
- 1 cup frozen peas and carrots
- 2 tbsp low-sodium soy sauce
- 1 tsp sesame oil
Instructions
- Prep Work: Gather all ingredients to ensure smooth cooking process. Beat eggs in small bowl.
- Cook Eggs: Heat oil in large skillet over medium-high heat. Scramble eggs for 1 minute until just set. Remove and set aside.
- Cook Vegetables: In same pan, sauté frozen peas, carrots, and chopped green onions for 2 minutes until warmed through.
- Add Rice: Add cooked rice to pan and stir constantly for 2 minutes until heated and separated.
- Season: Drizzle soy sauce and sesame oil over rice, mixing well for 1 minute until evenly coated.
- Finish: Return scrambled eggs to pan, gently fold in, and serve hot with additional green onions.
Notes
- Use day-old refrigerated rice for the best texture – fresh rice becomes too sticky when fried
- Keep your wok or skillet extremely hot throughout cooking to achieve that signature smoky flavor
- Cook eggs until just set, not fully dry, so they stay fluffy when mixed back in
- Add soy sauce around the edges of the pan, not directly on rice, for even distribution
