- 8 oz Rice noodles
- 1 can (13.5 oz) Full-fat coconut milk
- 2 tsp Curry powder
- 1 cup Mixed vegetables
- 1/4 cup Fresh basil, chopped
- 2 tbsp Lime juice
Instructions
- Prepare Noodles: Cook rice noodles according to package instructions until tender. Drain thoroughly and set aside.
- Sauté Vegetables: Heat oil in large pan over medium heat. Add mixed vegetables and sauté for 5 minutes until crisp-tender.
- Create Curry Base: Add coconut milk and curry powder to pan. Simmer for 3 minutes until heated through and fragrant.
- Combine Noodles: Add cooked noodles to pan and toss to coat with sauce. Warm for 2 minutes until heated through.
- Finish and Serve: Remove from heat. Stir in fresh basil and lime juice just before serving.
Notes
- Use full-fat coconut milk for the richest, creamiest sauce that won’t separate during cooking
- Don’t overcook the vegetables – they should retain some crunch for textural contrast against the soft noodles
- Toast curry powder in the dry pan for 30 seconds before adding coconut milk to enhance its flavor
- Add lime juice and fresh herbs after removing from heat to preserve their bright, fresh flavors
