Description

A delicious and creamy coconut curry noodles recipe featuring tender rice noodles in a rich coconut milk sauce with aromatic curry spices, fresh vegetables, and bright herbs.


Ingredients

  • 8 oz Rice noodles
  • 1 can (13.5 oz) Full-fat coconut milk
  • 2 tsp Curry powder
  • 1 cup Mixed vegetables
  • 1/4 cup Fresh basil, chopped
  • 2 tbsp Lime juice

Instructions

  • Prepare Noodles: Cook rice noodles according to package instructions until tender. Drain thoroughly and set aside.
  • Sauté Vegetables: Heat oil in large pan over medium heat. Add mixed vegetables and sauté for 5 minutes until crisp-tender.
  • Create Curry Base: Add coconut milk and curry powder to pan. Simmer for 3 minutes until heated through and fragrant.
  • Combine Noodles: Add cooked noodles to pan and toss to coat with sauce. Warm for 2 minutes until heated through.
  • Finish and Serve: Remove from heat. Stir in fresh basil and lime juice just before serving.

Notes

  • Use full-fat coconut milk for the richest, creamiest sauce that won’t separate during cooking
  • Don’t overcook the vegetables – they should retain some crunch for textural contrast against the soft noodles
  • Toast curry powder in the dry pan for 30 seconds before adding coconut milk to enhance its flavor
  • Add lime juice and fresh herbs after removing from heat to preserve their bright, fresh flavors
