Description

Indulgent dessert bars combining fudgy brownies and chewy chocolate chip cookies loaded with crushed sandwich cookies for the perfect sweet treat.


Ingredients

  • 6 tbsp unsalted butter, room temperature
  • 1/2 cup light brown sugar, packed
  • 1/8 cup granulated sugar
  • 1 large egg yolk, room temperature
  • 1 tsp vanilla extract
  • 3/4 cup + 2 tbsp all-purpose flour
  • 1/2 tsp fine sea salt
  • 1/2 tsp baking soda
  • 4 sandwich cookies, chopped (plus extra for topping)
  • 4 tbsp unsalted butter
  • 1/3 cup semi-sweet chocolate chips
  • 1/4 cup + 1/8 cup granulated sugar
  • 1 large egg, room temperature
  • 1/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp fine sea salt

Instructions

  1. Line a square 8×8 baking pan with parchment paper to hang over all four sides. Preheat oven to 350°F/180°C.
  2. Cream butter, brown sugar, and granulated sugar for 2 minutes until light and fluffy.
  3. Mix in egg yolk and vanilla extract until well combined.
  4. Fold in flour, salt, baking soda, and chopped sandwich cookies until just combined. Set aside.
  5. Melt butter and chocolate chips together until smooth and combined. Set aside to cool slightly.
  6. Whisk sugar, egg, and vanilla together until light and fluffy, about 2 minutes.
  7. Stream melted butter and chocolate mixture into bowl and mix until just combined.
  8. Fold in flour, cocoa powder, and salt until just combined.
  9. Scoop two tablespoon-sized portions of cookie dough into prepared baking pan.
  10. Scoop brownie batter into alternate spots between cookie dough portions.
  11. Press down cookie dough balls so they’re the same height as brownie batter.
  12. Sprinkle extra chopped sandwich cookies on top.
  13. Bake at 350°F/180°C for 25-27 minutes until cookie dough is golden brown. Cover with foil after 20 minutes to prevent over-browning.
