Indulgent dessert bars combining fudgy brownies and chewy chocolate chip cookies loaded with crushed sandwich cookies for the perfect sweet treat.

- 6 tbsp unsalted butter, room temperature
- 1/2 cup light brown sugar, packed
- 1/8 cup granulated sugar
- 1 large egg yolk, room temperature
- 1 tsp vanilla extract
- 3/4 cup + 2 tbsp all-purpose flour
- 1/2 tsp fine sea salt
- 1/2 tsp baking soda
- 4 sandwich cookies, chopped (plus extra for topping)
- 4 tbsp unsalted butter
- 1/3 cup semi-sweet chocolate chips
- 1/4 cup + 1/8 cup granulated sugar
- 1 large egg, room temperature
- 1/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 tsp fine sea salt
Instructions
- Line a square 8×8 baking pan with parchment paper to hang over all four sides. Preheat oven to 350°F/180°C.
- Cream butter, brown sugar, and granulated sugar for 2 minutes until light and fluffy.
- Mix in egg yolk and vanilla extract until well combined.
- Fold in flour, salt, baking soda, and chopped sandwich cookies until just combined. Set aside.
- Melt butter and chocolate chips together until smooth and combined. Set aside to cool slightly.
- Whisk sugar, egg, and vanilla together until light and fluffy, about 2 minutes.
- Stream melted butter and chocolate mixture into bowl and mix until just combined.
- Fold in flour, cocoa powder, and salt until just combined.
- Scoop two tablespoon-sized portions of cookie dough into prepared baking pan.
- Scoop brownie batter into alternate spots between cookie dough portions.
- Press down cookie dough balls so they’re the same height as brownie batter.
- Sprinkle extra chopped sandwich cookies on top.
- Bake at 350°F/180°C for 25-27 minutes until cookie dough is golden brown. Cover with foil after 20 minutes to prevent over-browning.
