Ingredients

  • 810 large eggs (fresh eggs work best for optimal flavor and binding)
  • 1 cup cottage cheese (full-fat varieties provide the creamiest texture)
  • 1/2 teaspoon fine sea salt (adjust to personal preference)
  • 1/4 teaspoon freshly ground black pepper (enhances overall flavor profile)
  • 1/2 cup shredded cheese (cheddar or mozzarella work wonderfully)
  • 1/21 cup optional add-ins (vegetables, herbs, or cooked meats)

Instructions

  1. Preheat oven to 325°F. Spray non-stick muffin tin thoroughly with cooking spray. Silicone muffin cups don’t require spraying.
  2. Combine eggs, cottage cheese, salt, and pepper in blender. Blend until mixture is completely smooth and well combined.
  3. Distribute cheese and desired toppings evenly among muffin cups. Pour egg mixture into each cup, filling approximately 3/4 full.
  4. Bake at 325°F for 22-25 minutes until tops are set and centers are firm. Let rest in muffin tin for 5 minutes before removing.

Notes

  • Room temperature eggs blend more easily and create a smoother mixture
  • Don’t overfill muffin cups as egg bites will puff during baking
  • Test doneness by gently pressing center – it should spring back when cooked
  • Allow proper resting time to prevent collapsing when removed
