Protein-packed cottage cheese egg bites that are perfect for meal prep and busy mornings. Fluffy, creamy, and customizable breakfast bites.

- 8–10 large eggs (fresh eggs work best for optimal flavor and binding)
- 1 cup cottage cheese (full-fat varieties provide the creamiest texture)
- 1/2 teaspoon fine sea salt (adjust to personal preference)
- 1/4 teaspoon freshly ground black pepper (enhances overall flavor profile)
- 1/2 cup shredded cheese (cheddar or mozzarella work wonderfully)
- 1/2–1 cup optional add-ins (vegetables, herbs, or cooked meats)
Instructions
- Preheat oven to 325°F. Spray non-stick muffin tin thoroughly with cooking spray. Silicone muffin cups don’t require spraying.
- Combine eggs, cottage cheese, salt, and pepper in blender. Blend until mixture is completely smooth and well combined.
- Distribute cheese and desired toppings evenly among muffin cups. Pour egg mixture into each cup, filling approximately 3/4 full.
- Bake at 325°F for 22-25 minutes until tops are set and centers are firm. Let rest in muffin tin for 5 minutes before removing.
Notes
- Room temperature eggs blend more easily and create a smoother mixture
- Don’t overfill muffin cups as egg bites will puff during baking
- Test doneness by gently pressing center – it should spring back when cooked
- Allow proper resting time to prevent collapsing when removed
- Store in refrigerator up to 5 days or freeze up to 3 months
