- 1/2 cup pumpkin puree

- 1/2 cup Greek yogurt
- 1 scoop protein powder
- 1 tsp pumpkin pie spice

- 1 tsp baking powder
- Pinch of salt
- 1–2 tbsp honey
Instructions
- Preheat the oven to 350°F and line a muffin tin with paper liners.
- In a bowl, whisk together oat flour, protein powder, baking powder, pumpkin pie spice, cinnamon, nutmeg, and salt.
- In another bowl, mix pumpkin puree, Greek yogurt, eggs, and honey until smooth.
- Combine the wet ingredients with the dry ingredients until just incorporated.
- Divide the batter evenly into the muffin tin and bake for 25 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool before serving.
Notes
Use fresh pumpkin puree for the best flavor. Adjust spices to taste and substitute Greek yogurt with a dairy-free option if needed.
