Ingredients

  • 1/2 cup pumpkin puree
  • 2 eggs
  • 1/2 cup Greek yogurt
  • 1 scoop protein powder
  • 1 tsp pumpkin pie spice

  • 1 tsp baking powder
  • Pinch of salt
  • 12 tbsp honey

Instructions

  • Preheat the oven to 350°F and line a muffin tin with paper liners.
  • In a bowl, whisk together oat flour, protein powder, baking powder, pumpkin pie spice, cinnamon, nutmeg, and salt.
  • In another bowl, mix pumpkin puree, Greek yogurt, eggs, and honey until smooth.
  • Combine the wet ingredients with the dry ingredients until just incorporated.
  • Divide the batter evenly into the muffin tin and bake for 25 minutes or until a toothpick inserted comes out clean.
  • Allow the muffins to cool before serving.

Notes

Use fresh pumpkin puree for the best flavor. Adjust spices to taste and substitute Greek yogurt with a dairy-free option if needed.
