Ingredients

  • 3 cloves fresh garlic, minced

  • 9 oz package cheese tortellini
  • 6 cups low-sodium chicken broth
  • 2 cups fresh spinach or kale
  • 2 teaspoons Italian seasoning
  • 1 lemon lemon juice (optional)

Instructions

  • Prep Ingredients: Dice carrots and celery into uniform pieces. Mince garlic finely. Cut chicken into bite-sized chunks for even cooking.
  • Cook Chicken: Heat olive oil in large pot over medium heat. Add chicken pieces and cook 6-8 minutes until golden brown on all sides.
  • Add Aromatics: Stir in minced garlic, diced carrots, and celery. Cook 3-4 minutes until vegetables begin to soften and garlic becomes fragrant.
  • Add Broth: Pour in chicken broth, Italian seasoning, salt, and pepper. Bring mixture to gentle boil, then reduce heat to simmer.
  • Cook Tortellini: Add tortellini to simmering soup. Cook 3-5 minutes until pasta floats to surface, indicating it’s done.
  • Finish and Serve: Stir in fresh spinach or kale just before serving. Add lemon juice if desired. Ladle into bowls and serve immediately.

Notes

  • Don’t overcook the chicken – it continues cooking in the hot broth, so golden exterior is sufficient
  • Use fresh tortellini when possible as it cooks faster and has better texture than frozen varieties
  • Add greens at the very end to maintain their vibrant color and prevent them from becoming mushy
  • For richer flavor, let the soup rest for 10 minutes before serving to allow flavors to meld
