- 1 medium Yellow onion, chopped
- 3 cloves Garlic cloves, minced
- 4 cups Low-sodium vegetable broth
- 1 cup Heavy cream
- 2 tbsp Fresh thyme leaves (or 1 tsp dried)
- 2 tbsp Butter
- Salt and pepper to taste
Instructions
- Step 1: Prepare Base – In a large pot over medium heat, melt butter. Sauté chopped onions and minced garlic until translucent and fragrant, about 5 minutes.
- Step 2: Cook Mushrooms – Add sliced mushrooms and cook until browned and tender, approximately 8 minutes. Don’t overcrowd the pan.
- Step 3: Add Liquid – Stir in vegetable broth and thyme leaves. Bring to a gentle simmer for about 10 minutes to develop flavors.
- Step 4: Blend – Using an immersion blender, blend soup until smooth, or transfer to regular blender in batches for safety.
- Step 5: Finish – Return blended soup to low heat, stir in heavy cream, and season with salt and pepper. Heat through without boiling for 5 minutes.
- Step 6: Serve – Serve hot, garnished with fresh thyme or croutons if desired. Taste and adjust seasoning before serving.
Notes
- Clean mushrooms with a damp paper towel instead of washing to prevent them from becoming waterlogged and soggy
- Cook mushrooms in batches if your pot is small to ensure proper browning rather than steaming
- Add cream off the heat or on very low temperature to prevent curdling and maintain smooth texture
- Reserve some sautéed mushroom slices before blending to add back for extra texture and visual appeal
