- 9 oz Fresh cheese tortellini
- 4 cups Fresh spinach
- 3 cloves Garlic cloves, minced
- 1 cup Heavy cream
- ½ cup Parmesan cheese, grated
- 2 tbsp Extra virgin olive oil
- Salt and pepper to taste
Instructions
- Cook Tortellini: Cook tortellini in salted boiling water according to package instructions until al dente (3-5 minutes). Drain and set aside.
- Sauté Garlic: Heat olive oil in large skillet over medium heat. Add minced garlic and sauté for one minute until fragrant.
- Wilt Spinach: Add fresh spinach to skillet and cook until wilted, approximately two minutes, stirring frequently.
- Create Cream Sauce: Pour heavy cream into skillet, stirring to combine. Simmer for five minutes until slightly thickened.
- Add Cheese: Stir in grated Parmesan cheese until completely melted and sauce is smooth.
- Combine and Season: Fold in cooked tortellini gently. Season with salt and pepper to taste. Serve immediately.

- Reserve pasta water before draining – add a splash if sauce becomes too thick
