Description

  • 9 oz Fresh cheese tortellini
  • 4 cups Fresh spinach
  • 3 cloves Garlic cloves, minced
  • 1 cup Heavy cream
  • ½ cup Parmesan cheese, grated
  • 2 tbsp Extra virgin olive oil
  • Salt and pepper to taste

Instructions

  • Cook Tortellini: Cook tortellini in salted boiling water according to package instructions until al dente (3-5 minutes). Drain and set aside.
  • Sauté Garlic: Heat olive oil in large skillet over medium heat. Add minced garlic and sauté for one minute until fragrant.
  • Wilt Spinach: Add fresh spinach to skillet and cook until wilted, approximately two minutes, stirring frequently.
  • Create Cream Sauce: Pour heavy cream into skillet, stirring to combine. Simmer for five minutes until slightly thickened.
  • Add Cheese: Stir in grated Parmesan cheese until completely melted and sauce is smooth.
  • Combine and Season: Fold in cooked tortellini gently. Season with salt and pepper to taste. Serve immediately.

Notes

  • Reserve pasta water before draining – add a splash if sauce becomes too thick
  • Don’t overcook spinach to maintain vibrant color and prevent bitterness
  • Use freshly grated Parmesan for better melting and superior flavor
