Description

A delicious and easy recipe for creamy tomato spinach pasta with succulent shrimp that you’ll love making at home.


Ingredients

  • 8 oz Linguine or Spaghetti
  • 1 lb Large Shrimp, peeled and deveined
  • 1 cup Cherry Tomatoes, halved
  • 4 cups Baby Spinach
  • 3 cloves Garlic, minced
  • 2 tbsp Extra Virgin Olive Oil
  • ¼ cup Parmesan Cheese, grated
  • ½ tsp Red Pepper Flakes (optional)
  • Salt and Pepper to taste

Instructions

  • Cook Pasta: Cook linguine or spaghetti according to package directions until al dente. Drain and reserve 1 cup pasta water for sauce consistency.
  • Prepare Aromatics: Heat olive oil in large skillet over medium heat. Sauté minced garlic until fragrant, about 1 minute, being careful not to burn.
  • Cook Shrimp: Add shrimp to skillet and cook until pink and opaque, approximately 3-4 minutes. Season lightly with salt and pepper.
  • Add Tomatoes: Stir in halved cherry tomatoes and cook until they blister and release juices, about 5 minutes. This concentrates their flavor.
  • Wilt Spinach: Gradually add spinach and stir until wilted, 2-3 minutes. The volume will reduce significantly as spinach cooks down.
  • Combine and Finish: Return cooked pasta to skillet with reserved pasta water as needed. Mix well, season to taste, and top with Parmesan cheese.

Notes

  • Save pasta water before draining as its starch content creates a silky sauce that binds all ingredients together naturally
  • Don’t overcook shrimp as they continue cooking from residual heat; remove when just pink to prevent rubber texture
  • Add spinach gradually in batches to prevent overcrowding the pan and ensure even wilting without releasing excess moisture
  • Serve immediately while hot as pasta continues absorbing liquid and may become dry if left sitting too long
