- 1/4 cup grated Parmesan cheese

Instructions
- Cook the pasta according to package instructions, then drain and set aside.
- Heat olive oil in a large skillet and sauté minced garlic until fragrant.
- Add the shrimp and cook until they turn pink, then remove and set aside.
- Pour in the heavy cream and stir in the sun-dried tomatoes; let the sauce simmer for 3 minutes.
- Return the shrimp to the skillet, add fresh spinach, and cook until wilted.
