- 3–4 pieces (1.5 lbs) Boneless, skinless chicken breasts
- 4 cloves, minced Fresh garlic
- 2 cans (15 oz each) White beans
- 4 cups Low-sodium chicken broth
- 1 can (4 oz) Diced green chilies
- 8 oz block Cream cheese
- 2 tsp Ground cumin
- 2 tsp Chili powder
- For garnish Fresh cilantro
Instructions
- Prepare Base: Place chicken breasts in slow cooker bottom and season generously with salt and pepper
- Add Aromatics: Sprinkle minced garlic evenly over seasoned chicken breasts
- Add Liquid: Pour chicken broth over chicken until completely submerged
- Layer Beans: Distribute drained white beans and diced green chilies over mixture
- Season: Add cumin and chili powder, stirring gently to distribute spices
- Add Cream: Cut cream cheese into cubes and place on top without stirring
- Cook: Cover and cook on low 6-8 hours or high 3-4 hours until chicken shreds easily
- Finish: Shred chicken with two forks, stir everything together, and serve hot
Notes
- Don’t stir the cream cheese initially – it will melt and incorporate perfectly during cooking without curdling
- Drain beans thoroughly but don’t rinse them – the starchy liquid helps thicken the chili naturally
- Let chili rest for 10 minutes after cooking – it will thicken considerably as it cools slightly
- For spicier version, add diced jalapeños or increase chili powder to taste preferences
