Description

  • ½ cup all-purpose flour
  • ¼ cup cornstarch
  • 1 cup buttermilk
  • 1 tablespoon hot sauce
  • 1 large egg
  • 2 cups panko breadcrumbs (plus extra if needed)
  • Vegetable or canola oil for frying
  • 12 slices mozzarella cheese
  • 12 slider rolls
  • Bang bang sauce (prepared separately)

Instructions

  1. Season chicken breasts on both sides with salt, pepper, and garlic powder. Set up three bowls: flour-cornstarch mixture, buttermilk-hot sauce-egg mixture, and panko breadcrumbs.
  2. Dredge each chicken piece in flour mixture, then buttermilk mixture, then press firmly into breadcrumbs. Ensure complete coating for maximum crispiness.
  3. Heat thin layer of oil in skillet over medium heat. Fry chicken in batches, 2-3 minutes per side until golden brown and internal temperature reaches 165°F.
  4. Transfer cooked chicken to paper towel-lined plate. Prepare bang bang sauce by whisking ingredients in small bowl.
  5. Cut chicken into slider-sized pieces. Place on buns, top with mozzarella while warm, drizzle with bang bang sauce, and serve immediately.
