- 1 lb Fresh or store-bought gnocchi
- 4 cups Fresh spinach
- 1 cup Crumbled feta cheese
- 2 tbsp Extra virgin olive oil
- 3 cloves Garlic cloves, minced
- To taste Salt and pepper
- 1 lemon Lemon zest
Instructions
- Step 1: Boil Gnocchi – Bring large pot of salted water to rolling boil. Add gnocchi and cook until they float to surface, about 2-3 minutes. Drain immediately.
- Step 2: Prepare Aromatics – Heat olive oil in large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds without browning.
- Step 3: Wilt Spinach – Add fresh spinach to skillet and cook until completely wilted, stirring frequently. This takes about 1-2 minutes.
- Step 4: Crisp Gnocchi – Gently fold in drained gnocchi and sauté for 3-4 minutes until edges become golden and crispy, turning occasionally.
- Step 5: Finish Dish – Sprinkle crumbled feta cheese over mixture and stir gently for 1-2 minutes. Season with salt, pepper, and fresh lemon zest before serving hot.
Notes
- Don’t overcrowd the pan when crisping gnocchi – work in batches if necessary for best results
- Pat gnocchi dry after draining to help achieve maximum crispiness during pan-frying
- Add feta cheese at the very end to prevent it from becoming too melted and losing its texture
- Save some pasta water before draining – it can help loosen the mixture if needed
