Instructions

  1. Preheat Oven: Position rack in center and preheat to 425°F for optimal heat circulation
  2. Sauté Onions: Heat 2 tablespoons oil in large skillet over medium heat. Add chopped onion with 1/2 teaspoon salt, cook 7 minutes until softened and sweet
  3. Add Seasonings: Stir in taco seasoning and 1 tablespoon oil, cook 30 seconds until fragrant
  4. Prepare Bean Filling: Add drained beans, remaining salt, and 1/2 cup water. Simmer on high, reduce to medium-low, mash some beans, cook 2-3 minutes until thickened
  5. Prepare Baking Sheet: Grease large metal baking sheet with remaining 2 tablespoons oil, arrange tortillas in single layer, ensuring oil coating
  6. Assemble Tacos: Spoon scant 1/4 cup bean mixture onto half of each tortilla, top with 2 tablespoons cheese, fold over and flip cheese-side down
  7. First Bake: Bake 8-10 minutes until golden brown and crisp on bottom
