- 1 lb lean ground beef
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 cup bell peppers, diced
- 15 oz can black beans, rinsed
- 1 cup corn
- 15 oz tomato sauce
- 2 tbsp taco seasoning
- 1 cup long-grain white rice
- 4 cups low-sodium chicken broth
- Fresh cilantro (optional garnish)
Instructions
- Step 1: Brown the Beef – In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and transfer to your slow cooker.
- Step 2: Sauté Aromatics – Sauté onions and garlic in the same skillet until translucent, about 3-4 minutes, then add to the slow cooker.
- Step 3: Combine Ingredients – Add diced bell peppers, black beans, corn, tomato sauce, taco seasoning, and rice to the slow cooker. Mix well to distribute evenly.
- Step 4: Add Liquid – Pour chicken broth over the mixture until completely submerged. Ensure rice is covered by at least one inch of liquid.
- Step 5: Cook – Cook on low for 6-8 hours or high for 3-4 hours until rice is tender and liquid is absorbed.
- Step 6: Serve – Stir gently before serving and garnish with fresh cilantro if desired. Let rest 5 minutes before serving.
Notes
- Use long-grain rice instead of short-grain to prevent mushy texture and ensure each grain stays separate
- Brown the beef thoroughly to develop deeper flavors and remove excess moisture before slow cooking
- Rinse black beans well to remove excess sodium and prevent the dish from becoming too salty
- Don’t lift the slow cooker lid during cooking as this releases steam and extends cooking time
